Now for the second cookie recipe: Shortbread!

2 cups | Butter, Softened |
1 cup | Icing sugar, sifted |
2 tsp | Vanilla |
3 cups | All-Purpose Flour |
1 cup | Cornstarch |
- Preheat oven to 300 F (150 C)
- Beat butter on medium speed of electric mixer until light. Gradually
add icing sugar and vanilla, beating until creamy. Gradually add flour
and cornstarch, beating until smooth. - Drop dough by spoonfuls onto ungreased baking sheet.
- Bake in centre of 300 F (150 C) oven for 25-30 minutes, or just until
set and starting to brown around the edges.
